Negroni Marmalade Sour

EARLY EVENING PICK-ME-UPS

A velvet textured drink with the unmistakable bitter punch of a well made negroni. Be sure to choose a good quality thick cut Seville marmalade, or think of it as a worthy end for some homemade marmalade that didn't quite set!

INGREDIENTS

  • 20ml Cornish Coastal Gin
  • 20ml Sweet vermouth
  • 10ml Campari
  • 25ml fresh lemon juice
  • Dash of Angostura bitters 
  • 1 tsp thick cut Seville orange marmalade 
  • 1 free-range egg white or 25 ml aquafaba
  • Wheel of dehydrated blood orange
  • Ice cubes

METHOD

Combine all of the ingredients in a cocktail shaker and give them a dry shake (without ice), then add ice to the shaker and shake again, hard, for around 10 seconds. Double-strain into your chilled glass.

If the wheel of dehydrated blood orange seems like a step too far, a twist of orange peel can be balanced on the foam and is a perfect alternative.
