EARLY EVENING PICK-ME-UPS
This is a drink to pull out on those cold autumnal and winter nights. The toasted spices bring aromatic warmth to this classic drink.
SERVES 1

INGREDIENTS

100ml Pure Golden Rum
-
75ml water
-
25g unsalted butter
-
Pinch smoked Cornish sea salt
-
Strip of orange peel
-
2 cloves
-
1 bay leaf
-
2 crushed cardamom pods
-
4 black peppercorns
-
2 tsps soft brown sugar

1 cinnamon quill cut in half
METHOD
- Gently toast the cloves, cardamom, peppercorns and orange before adding the water and sugar. Bring to a simmer then lower the heat before adding the rum and butter. Then heat gently and do not boil.
- Stir before straining into a jug, stick blend to foam and serve with grated nutmeg and half the cinnamon quill in each drink.
