EARLY EVENING PICK-ME-UPS
A modern take on the New Orleans classic. Expect a texture that’s lighter than clouds. The Fig leaf syrup brings the extraordinary flavour of coconut. It is stunning when garnished with fragrant hawthorn which ordinarily blossoms early-to-mid June.
- 50ml Cornish Coastal Gin
- 25ml fresh lemon juice
- 20ml fig leaf syrup
- 1 large egg white or 25ml of aquafaba
- 30ml single cream
- Soda water
- Hawthorn blossom / small fresh fig leaf
- Ice cubes
Combine the gin, lemon juice, syrup, cream and egg white in a shaker and dry shake for 10 seconds. Then add ice and shake hard for another 10 seconds before straining the cocktail shaker into the glass.
Wait for 20 seconds before gradually topping with soda. Ensure that you pour into the centre of the drink to raise an even foamy head.
Garnish with the hawthorn blossom.
Hawthorn could be replaced with another edible flower or a fig leaf pressed to the inside of the glass.
