We were intrigued to try this curious riff on the classic G&T. The mesmerising visual effect of the two liquids mixing is stunning. You can’t beat that wonderful coffee hit that comes with a fresh espresso. We played around with a couple of different syrups including one made with rosehips and settled on lavender and lemon as it brought a welcome floral sweetness to the drink. The savoury wild botanicals in the gin bring balance to the sweet elements.
INGREDIENTS

25ml Porthilly Spirit Cornish Coastal Gin

Double espresso, we used Debeka beans from our friends at Yallah Coffee
- <Li>12.5ml lavender & lemon sugar syrup</li>

Indian tonic water
METHOD
Fill a highball glass with ice.
Next add the gin and sugar syrup, before topping with tonic water, remembering to leave space for the espresso.
Finally pour in the espresso and stir.
Drink immediately
