We love this cocktail, a true meeting of land and sea. Cucumber meets wild coastal gin botanicals and ends in a refreshing twist on a gin sour recipe. This drink was created by Jonny the general manager at Prawn on the Lawn Padstow and came about after a collaborative morning spent with owners Rick and Katie.
INGREDIENTS

50ml Cornish Coastal Gin
- 25ml blitzed cucumber, skin on
- 12.5ml lemon and thyme syrup
- 25ml lime juice
- Half a pipette of Ms. Better's Miraculous Foamer Bitters (VG) or one egg white
- Cucamelon
- Pinch of thyme leaves
METHOD
Combine all of the ingredients in a cocktail shaker and give them a dry shake (shaking without ice), then add ice to the shaker and shake again, hard, for around 10 seconds.
Strain into your chosen ice filled glass and garnish with a cucamelon and sprinkling of thyme leaves.
