The cortado is one of our favourite coffees. It roughly translates from Spanish as to cut or chop up. It consists of equal parts espresso and steamed milk and is lifted here by what is essentially a deconstructed hot coffee liqueur. The panela sugar syrup brings warm hints of liquorice and rich spice that will see you through the colder months.
INGREDIENTS

12.5 ml Porthilly Spirit Cornish Vodka
- 12.5 panela sugar syrup
- Las Brisas double espresso (New Dawn Traders sail-traded beans)
- Steamed milk
METHOD
Combine the panela syrup and vodka with a fresh double espresso before topping with steamed milk.It should be a touch shorter than a flat white. It makes a superb pairing to a warm donut.
